
Ingredients
- 3 cups all-purpose flour (360g)
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 3 large eggs
- ½ cup packed light or dark brown sugar (110g)
- ½ cup granulated sugar (100g)
- 1 cup vegetable oil (240mL)
- 4 teaspoons vanilla extract
- 3 cups grated zucchini (390g)
Instructions
- Preheat oven to 350 degrees spray 2 loaf pans and line with paper.
- Large bowl combine dry ingredients (flour, salt, baking soda, baking powder, and cinnamon).
- Medium bowl beat eggs with both sugars until smooth. Add oil, vanilla, and fold in zucchini.
- Pour wet mixture into dry and stir until fully incorporated.
- Divide into the two pans evenly.
- Bake for 50-60 minutes or until a knife comes out clean.
- Let cool for 10 minutes before moving to a rack to cool completely.
Notes
The original recipe included walnuts which seem since but I’ve been skipping them for us. Also, the original used a full cup of brown sugar. I followed this at first but my family agreed that it was a little too sweet.
