Zucchini Bread

Ingredients

  • 3 cups all-purpose flour (360g)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 3 large eggs
  • ½ cup packed light or dark brown sugar (110g)
  • ½ cup granulated sugar (100g)
  • 1 cup vegetable oil (240mL)
  • 4 teaspoons vanilla extract
  • 3 cups grated zucchini (390g)

Instructions

  1. Preheat oven to 350 degrees spray 2 loaf pans and line with paper.
  2. Large bowl combine dry ingredients (flour, salt, baking soda, baking powder, and cinnamon).
  3. Medium bowl beat eggs with both sugars until smooth. Add oil, vanilla, and fold in zucchini.
  4. Pour wet mixture into dry and stir until fully incorporated.
  5. Divide into the two pans evenly.
  6. Bake for 50-60 minutes or until a knife comes out clean.
  7. Let cool for 10 minutes before moving to a rack to cool completely.

Notes

The original recipe included walnuts which seem since but I’ve been skipping them for us. Also, the original used a full cup of brown sugar. I followed this at first but my family agreed that it was a little too sweet.
